Having a birthday around Easter is great fun! There are always chocolate bunnies still lingering around for scrumptious birthday breakfasts, and cakes baked in eggs are a sure fire way to make the day special. Any type of sweet baked in an egg can be fun – brownies perhaps? Check out these oh so sweet and super festive Happy Birthday eggs!

How to make these fun and festive Happy Birthday Eggs!

To make the happy birthday egg: poke a small hole in the top of each egg and gently pull back the top 1/5 of the eggshell. Pour out the insides and save for future use. Rinse each eggshell and allow to dry before dipping and painting with an egg dye kit (or create homemade edible egg paint). Allow the eggs to fully dry.

Mix your favorite cake recipe per instructions (this jelly bean cake is a fabulous one to try). Fill each birthday egg about 3/4 of the way up with batter. The easiest way to get the eggs to stay standing during this process is to use a cupcake tray. A mini tray will hold one egg per slot. A large cupcake tray can fit 2 eggs per slot, but be careful the eggs do not touch or they will brown on the side they are touching each other.

Bake the eggs checking back often. They will not need to bake the entire time the recipe suggests, ours baked about 1/2 the time. Check the doneness by inserting a toothpick into the center, when it comes out clean the happy birthday egg cakes are done.

How to bake happy birthday egg cakes

Tint the frosting with food coloring to match the colors of the eggs for a vibrant birthday cake display! A candle in each happy birthday egg and you are ready to celebrate whatever is coming up this weekend. Happy Friday!
