Fried Cheesecake Birthday Bites

Don’t these cheesecake bites look amazing? They are such an easy and fun stand in for a birthday cake. A plate filled with candle topped ones makes a gorgeous display. And you can eat them without forks and plates (Hello end of summer picnic party!).

To make the cheesecake bites you will need cheesecake (store-bought or your favorite homemade recipe), one package of wonton wrappers (square or circle shaped, instructions are for square), vegetable oil, one egg, one cup milk, powdered sugar, whipped cream and mint leaves for garnish.

Before starting, prepare the egg wash by combining egg and milk in a small bowl and whisking well.

Cut the cheesecake into uniform pieces, about 3 by 1 inch in size. Position a wonton wrapper on clean surface, one corner facing you. Brush the wrapper with egg wash, blotting any excess. Place a cheesecake piece in the center of the wrapper. Fold wrapper by taking corner closest to you and joining to upper corner, covering cheesecake and forming a triangle.

Then take a corner on each end and gently bring them towards the center, one corner overlapping the other. Make sure all edges are sealed. Use a small amount of egg wash to hold shape in place. Heat oil in pan. Fry the cheesecake bites until golden brown, about 2-3 minutes. Place powdered sugar in a bowl. Carefully remove cheesecake bites from oil and dip in powdered sugar to coat, if preferred. When cooled slightly, top with whipped cream and garnish with mint leaves.
