Orange marmalade cookies + ice cream sandwiches

Paddington cookies

We don’t go to see very many movies… between tickets, popcorn and potty breaks it just rarely seems worth it to our family. But, with holiday break coming up I often look for something good to see this time of year. Have you heard that they’re bringing a childhood favorite Paddington Bear to the big screen this holiday season? It is in theaters January 16!

The movie based on the beloved novels by Michael Bond, is being produced David Heyman (HARRY POTTER) and boasts an all star cast that includes Nicole Kidman. We’ve watched the trailer (see it below!) and are definitely headed out to see it over winter break. Such a fun loving and hilarious story.

In honor of the new movie release and in partnership with PADDINGTON I created a yummy pre-movie snack, that all kids and bears alike will devour. Orange marmalade ice cream sandwiches! The cookies cut into bear paws for filling a winter day with baking fun.

To make the orange marmalade bear paw cookies; you’ll need my favorite sugar cookie recipe that you can alter to add the orange marmalade taste, and a bear print cookie cutter.

Make the cookies by mixing 1 cup shortening and 2 cups sugar in a large bowl. Beat in 3 eggs one at a time. Stir in 1/4 cup of orange marmalade and 1 tablespoon vanilla.

In a separate bowl stir together 5 1/2 cups flour, 2 tsp baking powder and 1 tsp salt.

Mix the dry ingredients into the wet in parts, until combined.

Be sure to chill the dough overnight for good cutting stability and cut out into paw shapes to bring Paddington alive for your family. Bake at 375 degrees for 8-10 minutes. You can allow the cookies to cool completely, but I actually love making these ice cream sandwiches with cookies still a little warm from the oven. Heavenly!

I learned an awesome trick for customizing ice cream a few years ago… Cold Stone style. Buy a good quality vanilla ice cream and smash up whatever you want to mix in. Put a cutting board in the freezer for about an hour. Pull out and use it to mix the ice cream with the topping. We’ve used it for making great peppermint ice cream, mint chocolate chip, cranberry, pumpkin (by mixing in about 1/4 cup pumpkin pie filling), and orange marmalade for these sweet treats. You can mix the ice cream ahead of time, cover and refreeze until needed.

Fill two bear paw cookies with the orange marmalade ice cream for a treat reminiscent of the mischievous little bear.

I got a copy of the book and have included pre-purchased tickets to the movie inside as a present for the kids this year. I am confident they will love the story just as much as I did when I was little and the movie will be a fun diversion to fill our holiday time off together.

To fill the break with other bear loving fun here is a coloring page, a Paddington connect the dots, and a story starter!

This post is done in promotional partnership with The Weinstein Company. Thanks for supporting the holiday sponsors that keep us crafting all year long.
