Every summer when the fourth of July rolls around I find myself dreaming of a restful day under the warm sun. The holiday is the epitome of summer and whipping up a batch of these patriotic pancakes is a great way to host a relaxing celebration of our country’s independence. Served on wrinkled linen and alongside big bowls of berries, this breakfast makes for a perfect morning to prep for the big night ahead!
To make the pancakes; start with your favorite recipe (here is mine), or make them from a box if you are short on time. Divide the batter into two bowls.
Combine three cups of pitted, stemmed cherries along with 1/4 cup sugar and 1/4 cup water in a food processor (or blender). Add the fruit to one bowl of the pancake mixture and cook as your recipe directs.
For a patriotic presentation layer the pancakes red on top of white and finish off with a heap of blueberries. The cherry pancakes are great on their own too. Make a batch of them to sweeten up any restful summer morning.
