A sweet way add a special touch to your holiday desserts. Homemade peppermint sprinkles taste great and are easy to make. Top a cake with the red sprinkles for a pretty Christmas effect, mix into ice cream for a special treat, or package in small containers to give as gifts to your guests and friends.
To make the peppermint sprinkles: Work in large batches to make the sprinkles quickly in mass. This recipe will make about 3 cups of sprinkles using: 8 ounces of powdered sugar, 1/2 tsp of kosher salt, 1 egg white, 1 tsp Vanilla extract, and 1 tsp peppermint extract.
Mix the ingredients in a mixer with the paddle attachment – or by hand until well combined. For optional coloring add in a couple drops of red food coloring.
Pipe out into long thin lines on a cookies sheet topped with wax paper. Use a cake piper or simple plastic bag with a small hole. Let dry for a full 24 hours. Then use a cake spatula to lift the sprinkles off the freezer paper and cut into size. Cover and save for later use.
