Pickling veggies sounds like something I would never do… until I did it once and realized it is crazy easy to do! We started pickling different veggies last year and it has become a little bit of an obsession. You can basically pickle anything and it automatically tastes 100% better! We’ve started making them in advance to bring to parties and set out as appetizers. Everyone loves trying the creations and ahhing over which recipe is their favorite.

For a recent shindig we decided to do a rainbow pickling. It’s just like plain pickling but brighter. Obviously better! Making the jars span the color spectrum is a fun way serve appetizers and create a gorgeous table display while you’re at it. This rainbow set is also now my go-to hostess gift when invited over for dinner.

Rainbow Pickled Veggies

Serve the pickled veggies in little appetizer plates with crusty bread nearby. Taste the rainbow! To make the basic recipe you’ll need something to seal the veggies in like a mason jar, veggies to pickle & vinegar mixed with a variation of herbs and spices. Below are my 2 favorite recipes of the year and a sneaky way to update store bought pickled veggies if that’s more your thing. ;)

Rainbow Pickled Veggies

Refrigerator Spicy Pickled Veggies

To make the refrigerator pickled veggies (our radishes and green beans) you will need:

  • 1 Tbsp Coriander seeds
  • 1 tsp Ground mustard
  • 2 tsp Minced garlic
  • 2 cups White vinegar
  • 2 cups Water
  • 1 Tbsp Kosher salt
  • 2 Tbsp Sugar
  • Veggies cut up to pickle

 

1. Prep veggies: wash/cut and arrange in jars leaving room for the liquid.

2. Bring all ingredients to a boil in a saucepan.

3. Take off the heat and add in food coloring of choice bringing the brine to a bright and fun color.

4. Pour the hot liquid into the jars making sure to submerge all the veggies.

5. Cover and let sit to cool, then refrigerate for at least 6 hours.

We found this recipe to be best after a couple days, although it will keep for 6 weeks in fridge.

Refrigerator Sweet Pickled Veggies

To make a sweet version of this pickled recipe which we used for the cucumbers and carrots (just a note the carrots are my favorite of the bunch!), you will need:

  • 2 3/4 cup White vinegar
  • 1/2 cup Water
  • 1 cup Sugar
  • 1 tsp. Coarse sea salt
  • 1/2 tsp Ground mustard
  • 1 Bay leaf, crumbled
  • 1 Cinnamon stick broken in half
  • 1/2 Tbsp Whole allspice
  • 1 tsp Coriander seeds
  • 1/2 tsp Red pepper flakes
  • 1/2 tsp Ground ginger
  • 3 Whole cloves
  • Veggies to pickle

 

1. Prep veggies: wash/cut and arrange in jars leaving room for the liquid.

2. Cook carrots (or other hard veggies) in boiling water for 4-5 minutes to soften. Rinse with cold water to stop cooking, this allows the brine to penetrate the veggies quicker.

3. Bring all ingredients to a boil in a saucepan. Take off the heat and add in food coloring of choice bringing the brine to a bright and fun color.

4. Pour the hot liquid into the jars making sure to submerge all the veggies.

5. Cover and let sit to cool, then refrigerate for at least 6 hours. This recipe will keep for 3-6 weeks in the fridge.

Updating Store Bought Pickled Veggies

If the thought of making pickled veggies from scratch is overwhelming. Start with the store bought variety. There are many independant brands you can find in the store with a unique pickling taste. Take a bottle home and try adding in a spice or a little sugar to adjust the taste.

To get the fun rainbow coloring: start by taking the veggies out of the brine. Add in the food coloring of choice and any spices desired. Mix well and replace veggies. Allow the jars to sit refrigerated for a few hours before serving to soak up the color and taste.

A party appetizer that doubles as a gift and a hipster hobby – it’s like scoring the trifecta of food crafts! My fridge is currently filled with jars of pickled veggies and lots of LaCroix. #MyHusbandIsAHipster HA! Have fun pickling.
