Every summer, we start off the season with a simple summer bucket list. It’s a fun way to ensure everyone gets to do at least a couple things that make the season special for them. My daughter always puts baking brownies at the top of her summer list. She really puts it at the top of every list to be honest! :)

How to bake great brownies
The great thing about using a Pillsbury™ brownie mix (which we purchased at Kroger) is that the recipe is so easy my 9 year old can quickly whip them up. It makes the baking process way more fun for us when we only need a couple simple ingredients and the steps are basic. We’ve sometimes tried more complicated recipes together, and while we can do them – they are not nearly as fun.
I’d rather focus on fun during the summer and add in our own special details to the process. The sprinkle addition was pure 9 year old fun! Also, these llama napkins were all her idea. I love the minds of my kids.
After trying a number of different brownie related recipes, I’ve found that a good boxed version competes with any homemade rendition of the treat easily.
One trick we learned in making the best brownies for this recipe is to stir the mix with a fork instead of a whisk. Not only is it easier to clean when you’re done, but the fork ensures you are not over mixing, ensuring your brownies have that perfect crusty top and soft interior mix to them.

Brownie Ice Cream Sandwiches
Update the Ice Cream Sandwiches this spring with our take using brownies to make them better!
Ingredients
- 1 box Pillsbury Chocolate Fudge Brownie Mix
- 2/3 cup oil
- 1/4 cup water
- 2 eggs
- 8 Scoops ice cream
- Sprinkles
Instructions

Start by mixing the brownie mix with the oil, water and eggs.

Stir until well blended, about 50 strokes.

Bake at 350 degrees for 30-35 minutes. For the ice cream sandwiches, you want the brownies not too soft in the middle so they will hold their form.
Once the brownies are cooled cut the brownies into small squares and top with ice cream.
Finish off each brownie with sprinkles and serve up for a sweet summer treat that everyone will love.
These brownie ice cream sandwiches are so amazingly good you guys! If you don’t currently have a summer bucket list going, may I suggest starting one and putting this activity directly at the top! Mix up the brownies with your kids, you see how easy it is. And enjoy the melting ice cream goodness while sitting on the grass for a sweet moment of pure summer bliss! It really is hard to beat.
