Easy Weeknight Dinner Idea With Garlic Roasted Chickpeas

Now that school is starting back up our leisurely summer nights are being replaced with homework, soccer and all the fall craziness. To make things easy I turn to my favorite easy weeknight dinner options. When I say easy, I mean 10 minutes and on the table type of easy. I also mean well rounded and something my kids will love. And bonus points if the meal is one that can be served in a fun way to make our crazy weeknights easting together a little more fun. This is easy if you have a stocked dinner party drawer to pull from.

For this week we tried out a fun combo of garlic roasted chickpeas, State Fair® Classic Corn Dogs grabbed at our local Walmart and pickled vegetables. It’s a quick weeknight dinner combination that is fun for the whole family. Served up in cute fair like hot dog holders makes for an on the go meal that will work any night of the week.

This would definitely be a manners off meal in my book! One of the things I strive for as a mom is having the best of all worlds, just not every night.

So while some nights we might host massive dinner parties and cook full Octopus to serve, obviously a manners on night. Another night we make an easy meal like this on the run. My kids know both worlds, which is exactly how I want it. I love the flow that happens when our kids are comfortable in all situations and can sit down at any ones table, anywhere and feel right at home.

Garlic Roasted Chickpeas

The garlic roasted chickpeas can cook at the same time as the corndogs, even on the same pan even - making clean up a breeze.

Cook Time 15 minutes

Ingredients

  • 1 can chickpeas
  • Olive oil
  • 3 heads garlic minced
  • Salt & pepper

Instructions

  1. Drain and rinse the chickpeas and place in a bowl.
  2. Mix with 2 Tbsp Olive oil & garlic. Lay out on a roasting pan.
  3. Sprinkle with salt and pepper.Roast for 15 minutes with oven set at 400 degrees.

The kids love this meal and I love serving up a weeknight dinner that I don’t have to stress about. We round out the meal with our favorite pickled vegetables made well ahead of time and basil for mixing in with the chickpeas.

Corn dogs are one of those nostalgic meals that I remember eating as a kid. I mean who can resist a hot dog wrapped in breading on a stick! It’s like they were made with kids in mind. ;)
