Warmer weather is on its way, and we are ready for it with this fun ice cream hack to take us into summer. Today, we are harnessing the fresh and creamy Darigold FIT milk to create a brand new recipe of rolled ice cream.
Have you seen the latest trend of rolled ice cream near you this year? We have been loving the Thai-style take on our favorite summer treat. But since the ice cream costs a pretty penny to purchase where we live, I figured it would be fun to try our hand at making it ourselves.
This recipe is so simple, your kids will scream for it over and over again almost as much as they love candy sushi – I can promise you that! And with the right supplies, the ingredients come together in a fun and unexpected way. We grabbed our Darigold FIT milk and all the other ingredients we needed at our local Safeway. All the summer fun without the hassle.
So, how exactly does rolled ice cream work? The ingredients are placed on a very frozen surface and instantly hardened into ice cream form. This is then rolled into the sweet cream rolls you see above for a refreshing summer treat.
In the ice cream shops, they have a gigantic freezer table that they basically use to get the rolled ice cream frozen and into shape. In our environment though, we had to find something to create this same experience at home.
There are a number of ways to do this that I found online, some more successful than others….
You can try your hand at dry ice or maybe try out a pan stuck into the freezer for 8 hours. We wanted a more fun approach though, so we bought this instant ice cream tray, and it worked perfectly!
Our recipe featured Darigold FIT, which has the benefit of 75% more protein and 40% less sugar than regular milk. It is 100% natural and lactose-free, so even my son, who loves dairy more than it loves him back, can eat up.
We also used cream, sugar, and sprinkles for our recipe, but you can choose the add-ins of your choice. That is part of the fun of making rolled ice cream at home!

The big thing here is that you want to use quality milk to ensure your ice cream has that perfect balanced creaminess that make it special.
Rolled ice cream tastes VERY similar to regular ice cream with the exception of the add-ins to the recipe. Since they are added in and simply rolled up vs. being churned together, they retain all their vibrancy of taste, crunch, etc., making rolled ice cream an even more fun experience to enjoy.
Rolled ice cream recipe
To make the rolled ice cream, be sure to have everything ready to go before you start. Once the recipe gets started, the process moves very fast. Time is definitely of the essence here, so go for it and have fun.
Rolled Ice Cream
Make this rolled ice cream recipe at home and add in sprinkles or anything you can imagine.
- 1/2 cup Dairigold FIT milk
- 1/4 cup Heavy cream
- 1 tsp salt
- 1 tbsp sugar
- 1/4 cup Mix ins of your choice
Start by whisking the milk, cream, salt and sugar in a bowl until combined
Pour onto the instant ice cream pan and use the spatulas given to work it down into a thin layer.
Quickly sprinkle on the mix ins of your choice and begin to roll the ice cream. Hold the spatula at a 45 degree angle for the best roll.
The easiest option is to simply place the rolls in a small ice cream cup. But there are lots of other fun styles—like stacking them pyramid-style for a rolled ice cream birthday cake! Or perhaps laying them long-ways across the table for each guests to grab their own roll option.
