I love a good popsicle. Especially the kind that you can really taste the fruit in. Nothing is more refreshing as the weather warms up than chopped berries in sweet treat form. Adding not just one type of fruit, but 3 different berries to this popsicle takes it from ordinary to incredibly celebratory.
The addition of blueberries, blackberries and raspberries make the pop a wonderfully healthy spring dessert alternative. It’s a gorgeous go-to treat you can feel great serving up after any summer dinner.
To make the triple berry popsicles you will need:
- 1/2 cup of honey
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- Juice from 1/2 a lemon
- Splash of Vanilla
Triple Berry Popsicle
- Wash the berries and place 95% if them in a blender along with the honey, lemon juice, and Vanilla. Keep a couple of each berry out to place in the popsicles whole.
- Blend the berry mixture until nearly smooth and fill the popsicle molds with the mixture.
- Coarsely chop the remaining berries and then place in the molds with the popsicle mixture. Push down on the berries with a kitchen skewer to allow berries to fill in throughout the mold.
The result is a wonderful treat surprise filled with healthy goodness that will grant a sweet end to any brunch or dinner party.
