Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3 1/2 tsp baking powder
  • 2 large eggs
  • 1 1/2 cups milk
  • 1 cup butter melted and cooled
  • 1 tsp vanilla extract
  • food gel or dye in rainbow colors
  • 2 cups heavy whipping cream cold
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • Yellow or gold food dye
  • Gold sprinkles for topping (optional)

Instructions

  1. Make the rainbow waffles by combining flour, sugar, and baking powder in a bowl. In another bowl, lightly beat eggs, then add milk, butter, and vanilla; mix well. Stir into dry ingredients just until combined.

  2. Divide batter evenly between 6 bowls. Add a few drops of red food coloring into the first bowl, stirring until uniformly distributed and desired shade is reached. Continue coloring batter in the remaining bowls: orange, yellow, green, blue, and purple.

  3. Follow instructions for your waffle maker. Cook waffles one at a time until all batter has been used. Stack the waffles in a rainbow pattern, red at the top, then orange, yellow, green, blue, and purple. Or you can start with purple at the top and end with red.

  4. How to make gold food coloring whipped cream by combining the heavy cream, powdered sugar and vanilla extract in the bowl of a large stand mixer with balloon whisk attached. Whip the ingredients until soft peaks form, about 10 minutes. Add yellow or gold food coloring to whipped cream and mix until the desired color is reached. Use immediately or refrigerate. Top waffles with whipped cream and add gold sprinkles for a finishing touch!
