Mini Red Velvet Cupcakes

First of my list of favorite mini desserts are these delicious mini red velvet cupcake! Instead of using regular cupcake wrappers make these sweet bites of mini red velvet cupcake goodness that are honestly, just a bite.

Ingredients

  • 1 1/2 cups sugar
  • 1 stick butter
  • 2 eggs
  • 2 1/3 cups cake flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp cocoa
  • 1/2 tsp sea salt
  • 1 cup buttermilk
  • 1 1/2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp distilled white vinegar
  • Basic cream cheese frosting

Instructions

  1. In a medium bowl sift together flour, baking soda, baking powder, cocoa, and sea salt. Sift two more times for a very smooth combination.

  2. Beat the butter and sugar in a large bowl for about 3 minutes until light and fluffy. Add the eggs one at a time.

  3. Mix in the dry ingredients and the buttermilk ¼ each addition switching back and forth. Beat between each addition. Mix in the red food coloring, the vanilla, and the tsp of white vinegar (which will create a stronger color for the cupcakes).

  4. Fill the mini-cups about ¾ of the way full, place on a cookie sheet and bake in 350 degrees preheated oven for 8-10 minutes. Check doneness with a toothpick. Allow the cupcakes to cool and top with basic cream cheese frosting.
