Annual Back To School Party With Fruit Snack Cakes

We are celebrating back to school with our annual “last night of summer” party this weekend. My kids go back to school SOOO early in the season and stopping to celebrate with them helps everyone get excited about the upcoming year ahead of us.

Back to school party!

Every year we make a night of the celebration, making a fun dinner, serving a special treat and stocking up on goodies to help start the year off right. This year, to get the kids excited about school lunches starting again, we grabbed our favorite fruit snacks and made a lemon fruit snack cake!

It is a fun way to help everyone say goodbye to summer and hello to a new year of school.

Ingredients

  • Welch's Fruit Snacks
  • 3 large eggs
  • 1/2 cup oil
  • 1/4 cup FRESH lemon juice
  • 1 cup buttermilk
  • 1 cup water
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 tablespoon lemon zest

Instructions

  1. To make the fruit snack cake for your back to school party, start by using a whisk or hand mixer to whisk wet ingredients together. Whisk for 2-3 minutes, or until they begin to fluff.

  2. In a separate large bowl, mix the dry ingredients.

  3. Add the wet ingredients to the dry ingredients, whisking while you add.

  4. Once the batter is fully combined, add in lemon zest and gently mix with a spatula.

  5. Fill small circle pans that have been oiled and bake 350º F for 25 minutes. Once cakes are done, cool and stack them. Then frost! Here’s a lemon frosting recipe we love recreating at home.

Along with serving the fruit snack cake and celebrating together, we often get back to school balloons, offer the kids a sweet school gift, and add in a few fun details like pinwheels and confetti to make it really feel like a party. We also spend time talking about our summers, some of the fun things we adored and share photos with each other. Then we transition to school and talk with the kids about their ideas for the coming year ahead.

We make lists of things together, like what they are excited about and what they might be nervous about. AND we always make lists of the lunch ideas they’d like to have in the coming year.
